Bob's chicken drumstick

Mustard chicken drumstick and honey
Ingredients :
  • 8 chicken drumsticks (about 600g)
  • 10 ml (2 teaspoons) sea salt
  • 10 ml (2 teaspoons) smoked paprika
  • 10 ml (2 teaspoons) dried mustard
  • 10 ml (2 teaspoons) garlic powder
  • 5 ml (1 teaspoon) of turmeric
  • 1,5 ml (1/4 teaspoon) cayenne pepper
For the sauce :
  • 180 ml (3/4 cup) yellow mustard (yellow mustard must be taken)
  • 1/2 cup (125 ml) honey
  • 1/4 cup (60 ml) brown sugar
  • 1/2 cup (125 ml) cider vinegar
  • 1/4 cup (60 ml) chipotle peppers in adobo sauce (can be found in any grocery store)
  • 30 ml (2 tablespoons) of ketchup
  • 10 ml (1 teaspoon) Worcestershire sauce
  • salt and pepper to taste
Steps :
  1. Preheat the BBQ to 350F and light the burners on one side only. If you have a charcoal BBQ, place on one side only.
  2. In a bowl, mix spices and seasonings. Sprinkle generously all the pestles with the spice mixture.
  3. Stain the pestles on the lit side (large flame) of the BBQ, about 3 minutes per side.
  4. Transfert the drumstick to the off (non-charcoal) side, close the lid and continue cooking for 15 minutes.
  5. Brush generously with BBQ sauce and retourn to the flame until the pestles are well caramelized.
  6. Keep a pestle just for yourself before placing the plate on the table...
  7. Serve
